Kyle , first , this is the normal measurement standard for tires . The "P" stands for passanger tire . "215" is the height of the tire . "75" is the series or width of the tire .Tha "R" , geez , I don`t know , but the 100S is the speed/performance rating on the tire . To match any tires , make sure all #`s are the same , but prefferably , stick to the same brand as different manufacturers vary slightly in true size which on posi`s and 4X4`s is very important . Hope it helps

215 is the sectional width of the tire in millimeters. 75 is the aspect ratio of the height of the tire, compared to the width... meaning the side wall is 75% of 215mm. S is the speed rating.. never seen the 100 before. Might relate to load capacity. 15 stands for the size of rim.

P-Passanger car
215-width of tires {metric millimeters}
75-height vs width ratio
R-radial tire
15-diameter of the tire to rim size , it`s a 15 inch tire
S-the speed rating , Z being the fastest rated tire
100-a subspeed rating , meaning if a tire is rated "S" , the #`ed rating can change higher or lower . A different tire might read P215/75/r/103s . As the goodmason pointed out , make sure these match as they can affect handling.
Gen III , you answer , technically correct , but not always the case if you measure . A uniroyal P235/75/R/15 for example , 205mm across and 155 high , very close to a perfect example of your answer{75%}, yet a P235/60/R/15 , it measures 235mm across and only 105 high . This tire should be a 40 series .
Onegoodmason , your not right , but , not entirely wrong . the 215 can be used for height in a "slang" type of way because a 235 is higher, but , because of the raio. The 75 is the series # , "basic" rule of thumb is , the higher the number , the more narrow the tire typically from 40 to 85 in the series #`s

Kyle - now that you have all the technical information that one could ask for - buy a bigger tire. If your 15" wheel is 7" wide try a 245/70 tire. I had a set of four Bridgestone Dueler HL's on a Cherokee and they looked great.
