It gets the computer a more accurate picture of the incoming air temperature. I know, at least on the 3.9, 5.2, and 5.9, that the IAT sensor is located inside the actual aluminium intake, and gets heat saturated (reporting 200+ degree air temps). The computer uses information from the IAT to advance/retard timing, and make minor adjustments to air/fuel ratios. The key thing is the timing advance though.

My truck, when it's below 75 out, is -significantly- quicker. Above 75 and the gains start to dimininsh (considering IAT adjuster), but are still there. Above 90 and I'm running the AC, so any gains I had are gone :0)
