Oil pressure remains constant through the RPM range, I just can't tell what pressure is represented by that gauge reading.
When I fire it up in the morning when the engine is cold, the gauge immediately goes to about 1/4 scale, but within 5 seconds or so, the needle eases up and is indicating as you see it.
I use Mobil-1 5W-30 (and have since I first changed the oil at 500 miles), and an oversized oil filter from Purolator that is the equivalent of the Fram PH8A, also since the first oil change. That size filter fits just fine on the 4.7L engine, and in my opinion the quality of the Purolator filter beats OEM and Fram hands down. Other good filters out there, I just don't use OEM or Fram.
Oil is changed every 3000-4000 miles, and the filter gets changed every 1500-2000 miles. Cheap insurance, keeps the engine happy and the gas mileage up.
It's not vehicle speed, but engine RPM that affects oil pressure. In the picture, the engine is only at 2400 RPM. It's pushing the Dakota real hard, but I expect the oil pressure at 2400 RPM would be the same if I just revved the engine to 2400 RPM with no load.

15-16 mpg city, 20 highway.
2001 4.7L, reg. cab, 4x2, 5spd with 3.92 gears. Stock except K&N FIPK and Leer top. Lost 1 mpg or so when I put Pirelli Scorpion tires on. (P275/60-16) Very heavy tire compared to stock Goodyears.
