With these mods, how much HP do you think I have?

K&N cold air intake
Helix throttle body spacer
ASP underdrive pulleys
Lakewood traction bars
Hypertec III programmer
160 degree thermostat
MSD Superconductor wires
Edelbrock shorty headers
3" cat back exhaust
Flowmaster duel dumped

No way of telling really.

Stock you run around 220, with all that you may be near 250. The problem with guessing is that you don't really know how things react to eachother. The CAI and the headers most likely work well together, but there is always the possibility that something else in the mix will mess things up.
And the pullys only help with the rear wheel hp, not engine hp.

160 degrees...too cold. Go to 180 degrees.
Helix....great paperweight. Lose it.
Underdrive pulleys.....pulls less hp from the engine. That how it gets to the rear wheels. Worth 5-10 HP.
Traction bars do not make HP.
3" exhaust (cat back) with dual Flowmasters and headers....with a stock cam? Wrong. Get a better cam, or at least move to 1.7:1 rockers. Then, you'll make a difference.

Oh yeah, take your clutch fan off and replace it with an electric one. It has the same affect as the underdrive pully's do. The one I have only runs when the A/C is on and after sitting at a stoplight. These trucks don't really need the fan for anything other than idleing.

Underdrive pulleys and electric fans don't usually mix. When you need the fan the most the altenator is putting out the least.

I have a 4.7 2001, cold air k+n, removed 3rd cat w/ str8 pipe, all else stock, where can i pick up some 1.7 rockers? and I have shorty Heddmans but I havent installed them yet - too much of a pain in the a$$ to egt too I'm waiting until fall when its cooler

You may be up against two problems.

One the 4.7 doesn't have rockers because it is an overhead cam engine. What you need to do is buy a pair of HO or other high performance cams.

Two, you may be disappointed with the headers because the stock ones are very good. At best gains will be minimal.

I have a 94 5.2 with a K&N, not cold air because they dont make them for this generation, killed the cat and flowmaster custom exhaust, jet chip stage 2, which I've been told suck..but I had no problems with it. I ran it on a dyno and on 4 back to back pulls had a dead on 13.0 to 1 A/F ratio. Anyways, to get to my point, I put down 190 to the ground. If you figure 20% drivetrain loss thats 238 at the flywheel. Thats with k&n, and exhaust, and a chip which no one likes. Thats my two cents. I would assume you'd be around 260ish
