Message: I think the only tire that reasonably within stock size is the Dunlop M3's http://www.tirerack.com/tires/tires.jsp?tireMake=Dunlop&tireModel=Winter+Sport+M3
The closest size being 255/45/17. I suggest finding a set of used 15 inch Dakota wheels then buying a good all season tire for that, much cheaper.

Message: Go with 15 or 18 inch rims, they seem to be all over eBay, etc. Low profile sux in the snow, 'cause you could be bouncin' off curbs and the like.
Why not just buy a 10yr old Shadow or Sundance and save your nice truck?

Message: just get some 15" steelies and snows that are about the same height as your summer tires to keep the speedo in the ballpark. And get it oil sprayed.

Message: i just ordered the pirelli scorpion ice and snow 255/65/16 on a set of 16" by 8" dakota sport/slt rims. the tires earned a 9.3(out of 10) on the snow rating at tire rack. at 87 bucks per tire it is worth it. only other tire SLIGHTLY better in snow is the bridgestone winter dueler in the same size. it got a 9.5 snow rating however at the expense of worse ratings on dry roads and rainy roads in traction, handling, and hydroplaning. plus these were about $115 each instead of $87. i just ordered 2 for the rear of the truck. should be fine wit the limited slip especially.
