From what i have seen if you bore more than .030 in a 318 you will be in the water jacket... and in the 360 the walls will be paper thin at the water jackets

Not too likely. I've seen .040 over 318s run for years, no prob.
But I wouldn't go further without sonic checking first, on any motor.
