Message: I know you said the catalytic converter was gutted but, It sounds kind of like the exhaust is plugged up. What did you do to fix the burnt valve? That was on cylinder 8 wasn't it? Have you done another compression test on all the cylinders for comparision of the average of all the cylinders?

Message: If steam (white or grayish in color) is comming out of there it sounds like your coolant is leaking into the valve-covers somehow. My friend JR had this problem on his '87 Jag so we replaced the gaskets. It didn't appear to do any damage and actually steam-cleaned his valves, but you should fix that ASAP if this is your problem. JR didn't drive the Jag much while it had that leak, and I'm betting that's why it didn't have any problems.

Message: Steam coming out the valve cover? I guess that is possible, but it is highly unlikely. The only way that could happen is if you have a cracked block/head and the crack would have to be in a location where there is a water jacket. If that were happening you would have to refill the radiator all the time.
Is your radiator loosing fluid?
If not, the white smoke your seeing is just hot gas vapors blowing by the piston rings and vaporizing the oil on the cylinder walls. Not much you can do about that except do a rebuild. You can rering the pistons for a short term fix.
