Subject: 32's on stock height and rims?

Ok, so my dad and I are interested in better tires for our dakotas. His truck got stuck in the snow (high centered? where the truck is too low and gets lifted up onto the snow so the tires lose traction) and we don't want to do that again!
He has a 2000 Dakota Quad Cab, stock alloy rims and tires, I have a 98 Dakota Club Cab, stock tires on our trucks stock alloys and without a lift?
My dad said: "Tire guy told my 15x8 with alloy rims and 31" tires. We take snowmobiles up to about 1-2 feet of snow.
Question we have is, can either of us put 32"x? 31/1050R-15/6. He was concerned about rub but I see Dakota's with 32 and no lift kits!"
Thanks.
BTW, if any of you are experience in the ways of snow, what tires do best?

31x105.5/15 will fit without a lift. Any bigger and they'll rub.
