Look at www.racingjunk.com, in the classifieds there is a GenI Dakota with a 383 stroker Chevy.
So, yes it has been done.

around here there is a trailer queen show dakota that has a corvette LT1 and 6 speed powering it. Also has about a $20,000 paint job.. so the motor is just a minor detail.
i have thought about that transplant many times considering there are about 2-3 350 long blocks sitting around my parents house and 2 TH350s and 2 700R4 trannies at my brothers...

It would be cheaper to use the small block chevy b/c of the parts available. More people build up these engines than any other.
You can get any HP you want and great reliability and drivability.
