Did you bleed your radiator, or just put in more fluid? There might be air in the lines still.

What you guys might want to try is wire the electric fan direct when you open the ignition. I did this and it worked great. It kept the temp down and I also removed the stat all together and it will run even colder. I do not recommend the latter if you live in a cold weather area. I live in miami so cold is not an issue. I did it to my truck and my buddy did it to his 4.7 ram. We hav had no issues.
