Will NOS hurt my engine, what kind of effects will it have on it, what would be a safe amount to use, and how much HP should it add?

you can run a 100 shot without taking any timing out, and a 150 shot with retarding the timing a little.
if your engine has a lot of miles on it, i would not spray so much.
as far as if it will hurt the engine, i dont see how it could help it.

Speaking of NOS, has anybody had any experience with the Sneeky Pete system? I am thinking about this and wonder what is involved in the install?
