Message: crwlaway,
You don't need to touch that center nut, that's for removing the wheel bearing. The brake rotor has a hole in the middle and fits around that, but over the wheel studs.
You will have to unmount the brake calipers from the wheel assembly, usually 2 nuts, usually over-torqued and rusted. Give them a good soak with a penetrating lubricant and let them sit 30 minutes if they won't move. Use some wire to tie the caliper to the spring so it's out of your way. If the rotor isn't lose already give it a few taps with a rubber mallet.
Clean the new rotor with a brake cleaner to remove the protective coating. Retract the brake caliper piston using a spreader or a C-clamp. Remove excess rust from the piston face and lubricate with a suitable brake lube. Lubricate the caliper slides and the pad slides. The caliper needs to be able to move to order to exert even pressure to both sides of the rotor. Failure to make sure the caliper can move freely will cause uneven pad wear, poor stopping and temporary warping.
