I have a 2002 3.9 and it is the same way, i love how it runs when it is cold, aside from the cutting out at 2400rpms and coming back at 2500. that is real annoying!

When your vehicle senses temperatures below a certain degree (I think 38) The automatic choke opens up and stays open until a desired temp is reached. During this time the choke cuts almost all the air to the engine, This riches your engine and the extra amount of fuel burns faster and makes more power. Its touchy too! huh

It has more power when its cold because the IAT sensor mounted in your intake manifold senses cooler tempature, but when it warms up it will cut back the fuel and timing(emisions thing). Its a common thing to relocate it and plug the hole. You get more power that way.
