I plan on installing the Hughes plenum gasket and HS 1.7 rockers.
Is there anything else I should do or replace while I'm in there?

Yes there are a couple of thinkg that I can think of...
First off I'm going off of a V8 so youe setup may/will be different slightly.
You should also consider the water pump bypass hose. Once you have everything apart it's an easy change. Is it time for plugs, wires, cap, rotor? Once you have it all apart it is really easy to change all of this. How about an PVC valve? Now is as good as any to replace it. How's your t-stat? With it all apart now is a good time to check and see.

I've done all you mentioned, even that damn bypass hose.
Had a 180 t-stat, put back 195.

I did the same as you. I really dont know what if any gains I may have seen with the 180 other than increased fuel consumption.
