 Subject: tire sizes?

i ordered a set of 20x8.5 AR Maxims and i know this has probably been said before, but i searched and am still confused. can i only get one size width of tire. the guy at the shop said i should get 255/35/20, but he wasnt very sure. They usually deal 17" and under (i know, i live in a small town). Would a 265/35/20 fit?
BTW, i wasnt gonna get the sidewall height of 35, but the guy said it was the best bet to prevent rubbing. Anyone use a 50 without excessive rubbing? Keep in mind the roads around here are bumpy to say the least. Should i worry about bending rims? Any info, please i have no idea what to do.
