Street Scene makes hidden hitch roll pans. You just flip the license plate down to expose the hitch receiver.

hidden hitch: $170 from Sirmichaels -- I got mine for about $140 from sporttruckdirect.com, I think -- and it works just fine up against the sirmichaels roll pan.
sirmichaels roll pan w/ hidden hitch cutout & flip down license plate bracket: $135
I really like the way it looks on my truck -- looks very subtle, smooth and stock. Not all pimp daddy.
