Ok, first off, the main difference between the mud terrains and the all terrains is that the muds will be louder on the road but also much better off-road. As far as sticking out, if you keep them on factory rims and go from the factory 10.50 tires to 12.50 tires, then you get an extra 1" sticking out. However, if you get different off-spaced rims, then you can have the rims stick out even further. The factory ones are 5.5, so a 4.5 would stick out an extra inch, and so on.
