I was wondering if there was a difference in where you placed the IAT sensor, before or after the nitrous/fuel jets? Would the temp of the nitrous affect the fuel curve? Or maybe damage the thermosensor?

Correct. Do not put the IAT sensor after the nitrous. It'll read too cold and back "freeze" and crack. Put it before the nozzle or stick it in the fender.
