Message: WHat gear would be good for acceleration, but could still do 70-80mph on the highway and still be between 3000-3500rpms?

My 3.92's do that. Actually I'm below 3K RPM's at 70. And close to 3500 at 100MPH or so. In 5th gear with a 5 speed. And the 318

Message: If you have 3.55's and are thinking of switching to 3.92's you should check what rpm you are turning at, say, 70 mph. Let's say it is 2500. Then to find out what rpm you would be turning at the same speed with 3.92's just multiply 2500 by 1.104 (the ratio of 3.92 to 3.55). So with the 3.92's you would be at 2760 rpm's at 70 mph. Hope that made sense.
