Between all the dakotas, which one and engine type would be the best to build off of. I really would like to get an R/T but didn't know if it would be easier to get more power than any other dakota engine.

Only the 360 give you what you want and it only comes in the R/T and some QCs.

You could consider a GenII dakota (around $3000 for 2WD, then drop a 360 in it (around $1500 from a junkyard. Now you spent way less then on an R/T and will smoke any stock dakota. GenII's weigh less and are easier to get better times out of.
