Is there anyone that makes a coil over for gen 1 or 2 Dakotas?? If so who and would there be any real advantage to going to coil overs?? I was thinking I might be able to get stiffer coil overs than I can coils to compensate for the big block I am installing.

They make a bolt-in coilover for the Gen3, but if you consider that the springs are almost identical and they use the same shocks as a Gen2, then you might wanna give it a try.
