Message: the thermostat is operated by the sprign heatin up and shrinking. it may not be perfect or exact. but it shoul dbe real close to what they say it is made for 180. there could also be fluctuations in the gauge you have giving the 185 reading. i would not worry about this at all. it is close enough. if it gets more of a variation of what it is suppose to open at then i would look at getting a new thermostat.

Metal expands when it gets hot not shrink!

Wrong.
The spring keeps pressure in the CLOSE direction. The little chamber that the shaft goes into (usually copper for its heat transfer abilities) has a wax pellet in it. As coolant temp rises, the wax pellet liquifies and expands, pushing the shaft out of the chamber and opening the valve. As coolant temp decreases the wax gets smaller, and the spring pushes the valve in the CLOSE direction.
Look on the side of the wax chamber and you will see 3 or 4 marks or depressions. Those are used to set the opening temperature during manufacture.
I have made 180* thermostats from 195* units by increasing the depth of those depressions.

Message: No sweat, Pete.
Most thermostats are made pretty much the same way. Next time you see one in auto parts store or just lying about, take a real good look at it.
Here's an excellent video that shows how they're made and how they work.
