This might sound really random, but does this sound right for a '97
5.2? idle is at 600 rpm, and 75 mph is at about 23-2400.

Idle sounds right. Cruising speed depends on your axle ratio. With the 3.55 axle, at 65 I'm turning 1800 RPMs and at 70 it's just over 2000. The factory tachs are not very accurate, so you're probably fine.

I have a 99 5.2 3.55 rears and 31inch tall tires. I turn out 1950 RPM's at 70 MPH. Like Bob said there are a few things to factor in.
