Lots of quality aftermarket thermostats available for that engine. I bought a Robert Shaw at Advance or AutoZone (don't remember which) for about 7 or 8 dollars. Easy to install also.

My understanding is that a cooler thermostat will make the computer keep the injection pulse width open longer in order to attain target operating temperature (warm it up). This will use a slight bit more fuel but can often produce a noticeable power increase, but not always. Lower engine temperatures can lengthen the life of some engine components, but no one has been able to convince me that 15 degrees is enough to make a big difference.

More fuel use, a little more power...maybe, longer part life...maybe.

I put a 180 in mine, very slight but noticeable power increase...and 1/4 to 1/2 mpg loss in fuel economy.
