I have been looking for information on the Dakota SS/T for some time without much luck. If anybody has any info or knows where I can get some info about these trucks I would greatly appreciate it.

You won't find any because the only way there were ever any Dakota SS/T's is when the owners bought some SS/T Decls and put them on their Dakota's. Never a real truck, just some decals on a Dakota.

The dakota ss/t is in the came class as the elusive civic type r, maxima type r, any ricer type r. someone just found the decals and slapped them on the truck. pure badging. it's all it is.
