How can i hook up my California Profile Amp and 10" Infinity Kappa Subs to the '02 CD/Cass stock head unit? Or do i have to go buy a new head unit? The truck im pulling it out of had rca cables but i didnt know if i could hook it up another way. She likes the way they felt in the old truck. ;) Any help would be nice.

If your amp has high level inputs you can just hook them up to your speaker wires for input. Otherwise you need a high to low level convertor, which is common at most stereo shops. You don't need a new head unit now.
