How much is too little? How do you know when you've got too little? What will happen, etc? My first mod will of course be exhaust work. I'm planning on just getting some cat-back, but if I'm at it, why not go all the way up to the headers? With everything else stock, is it reasonable to go that far? I do intend to play with intake and get a new PCM doown the line.

If you're gonna exhale, you gotta inhale. If you don't keep it even, you may end losing power overall, or losing power at some part of your powerband. From the input side, there's intake, TB, intake manifold, valves, heads, pistons, cam, and crank. From the output side, there's heads, cam, valves, headers, cat, and exhaust. In the middle, theres the transmission, valve body, torque converter, driveline, and differential. In between all that there's money!

Too little back pressure will cause some loss of power in lower rpm range but some gains in higher rpm range.Example, 1 1/2 inch headers with single catback makes better low end power and 1 5/8 headers with dual catback makes better top end power.

From others who have played around with the 4.7L exhaust (including the aftermarket headers), there isn't any significant gains to be made. 3" from the cat on back is more than adequate...with a high-flow cat, there will be some loss on the bottom end with a little bit more power at the top.
