I'm thinking about getting a V8 Grand Cherokee ($2500 + $500 veterans rebate), however, I can't find a Jeep message board with much on it about the 4.7. My question is: how do you improve low end torque? I don't like the looks of the stock curve. Is there a cam out there? Any other suggestions?

Don't let the looks of that stock curve scare you. It has absolutely nothing to do with real world performance. Some computer graphics geek made that graph to look pretty. Just go test drive one and then decide.

As a former Grand Cherokee I can say the best Jeep site on the net is www.jeepsunlimited.com I dare say it is better for Jeeps then this site is for Dakotas. Looks at reviews about the Jeep, even with the non-HO 4.7 it beats almost every other SUV in acceleration (except maybe the BMW and MB) that includes the 280 HP GM SUVs. I don't think you need to worry about more low end unless your going to tow 4000+ pounds a lot, and then I'd get a Dakota quad with the 360.
