Go with the V8 if its still in good runing order. I've driven a few of those and they're a blast. Besides...its a V8!

Obviously, the V8 will have more TQ and HP but that would depend on the modifications you are looking at to make either one faster.
Personally, rebuild the '91 engine and add a few Mopar Performance parts to it. (The V8's will have more available parts than the V6's.)

with the 91 not being a magnum i cant find anything for it to make it faster because every thing i find is for 92 and up.
would the under drive pulleys work that are for a 92 and up or any other parts like the cold air intakes?
