What type of daily driving differences would i notice, but still small performance differences, when i change out my current tires with a set that is roughly 2 1/4 inches taller (29") with 3.55 gears?

Going from a 26.7 inch tire to 29.06 inch tire will change your ration from 3.55 to 3.29. Basically, you are going to lose low-end performance and gain slightly better mpg on the road.
